Chocolate Muffins Recipe

Equipment:
Muffin baking tray
weighing scales
mixing bowl
electric whisk or balloon whisk
seive

For the Sponge:
50g butter
759 brown sugar
1 egg
100g plain flour
2 teaspoons baking powder
1 tablespoon cocoa powder
90ml milk

1.  Preheat oven to 190 C/ 375 F/ gas mark 5
2.  Use a paper towel to grease the muffin tray with a little soft butter
3.  Put the butter, sugar and egg into a large mixing bowl.  Sift in the flour.  Stir the ingredients together with a wooden spoon until well mixed.
4.  Sifte the baking powder and cocoa powder into the bowl.  Add the milk.  Mix them together.
5.  Use a teaspoon to divide the mixture equally into the muffin tray.  Bake the muffins for 12 minutes.
6.  Leave the muffins in the tray until they are cool, and then decorate them with buttercream icing.

For the Buttercream Icing:
75g butter
150g icing sugar
1-2 tablespoons milk
2 tablespoons cocoa powder
hundreds and thousands

1.  Use the whisk to beat the butter in a large bowl until it is soft.
2.  Sift half of the icing sugar into the bowl, and then beat it with the butter until the mixture is smooth.
3.  Sift the rest of the icing sugar into the bowl and add one tablespoon of milk.  Beat the mixture until it is smooth and creamy.
4.  If the mixture is too thick, add a little extra milk to make it more runny.  Add extra icing sugar if you need to thicken the mixture.
5.  Add the cocoa powder and mix.
6.  Place some icing onto each cake and sprinkle with some hundreds and thousands
